Today I'll be sharing one of the most simplest recipe in history but very tasty
and refreshing. I will be using LITCHI/LYCHEE or CHINESE GUINEP as
most people in the CARIBBEAN call it.
Litchi/Lychee was originated in ASIA.
This fruit is covered by a dark pink rough textured peel but very sweet on the inside. Open it carefully and you shall find a sugary white translucent pulp which is filled with goodness.
My father was the first person to introduce me to litchi/lychee when I was a teenager in Jamaica. Then as a adult living in the south side of America I saw it in every grocery store. So this is how it became a FAV of mine....

WAYS TO USE LITCHI/LYCHEE JUICE
Peel off the rough skin and eat the juicy pulp. Well that is just one of the many ways of gulping down this sweet awesomeness. People in various countries have mastered the skill of turning this fruit into delicious creations. Slice, cut, freeze or pulp it, litchi offers the same great flavour no matter which form you choose. This Chinese native turns it into jams, candies, salads, snacks, etc. amongst many countries around the world.

INGREDIENTS
2 bags of litchi/lychee
3 bottle of water
1/4 cup of brown cane sugar
1 tbsp. of lemon juice
METHOD
Wash litchi/lychee properly to ensure they are clean.
Peel the skin off.
Extract the seeds from the pulps.
Put the pulps in the blender.
Add water, lemon juice and sugar then blend for 1 minute and enjoy this refreshing juice.
